Our bees
Our apiary is proud to raise Carniolan honey bees (Apis mellifera carnica), a gentle and highly productive honey bee originally from Slovenia. Known for their calm temperament, Carniolan bees are easy to work with and excel in cooler climates. They are exceptional at surviving harsh winters by conserving their honey stores, rapidly build strong colonies in the spring, and continue foraging even on cool, cloudy, or damp days when other bees often stay in the hive. Valued by beekeepers around the world for their resilience, efficiency, and gentle nature, Carniolan bees are the second most popular honey bee strain globally and remain a cherished symbol of Slovenia, where they are the only honey bee legally permitted to be kept.
Our honey
Our honey is 100% pure, raw, and natural—nothing added and nothing removed. Every jar reflects the flowers and plants our bees visited throughout the season, giving each harvest its own unique flavor, aroma, and color. The nectar source also determines how the honey crystallizes over time, whether it becomes smooth and creamy or develops a more textured crystal.
We harvest our honey only after the bees have fully ripened and capped it, ensuring it has the proper moisture content for long-term quality. Pure honey has an incredibly long shelf life when stored properly, but if harvested too early with too much moisture, it can ferment. To keep our honey tasting as fresh as the day it was harvested, we freeze it immediately after extraction, allowing us to offer beautiful liquid honey throughout the year.
Because our honey is never pasteurized or overheated, it will naturally crystallize over time. That's a hallmark of genuine raw honey—not a sign that it has spoiled. If you prefer it liquid, simply place the jar in a warm water bath and gently heat it until the crystals dissolve. Avoid high temperatures, as excessive heat can reduce the naturally occurring enzymes and delicate flavors found in raw honey.
Looking for honey straight from the hive? Our first harvest is typically in late June or early July. Spring honey is always our most popular and often sells out quickly, so we recommend reserving yours early.
